Pineapple Lump Lolly Cake

Today I decided to make a variation of Lolly Cake.
For the non-Kiwi's out there Lolly Cake is a New Zealand recipe for a slice.


LOLLY CAKE RECIPE

Ingredients: 
1/2 tin of Condensed Milk
120g Butter (softened)
250g packet of malt biscuits (crushed finely)
1 packet (approximately 250g) of lollies, typically these would be a packet of Eskimo Lollies.
(I substituted for Pineapple lumps).
Coconut to cover the exterior of the log once made. (I omitted this step, as I'm allergic).

Instructions:
1. Crush the biscuits finely: I put mine into a triple layered plastic bag, then smashed them repeatedly with a rolling pin. 

2. Combine the softened butter and condensed milk in a microwave safe bowl and allow them to melt together in the microwave. It took me about 45 seconds to do this (*Time depends on your microwave and settings).
3. Combine the crushed biscuits and the butter/condensed milk mixture into a bowl. Stir to combine. 

4. Mix in the pineapple lump bits. (I cut mine into two bits for each bit so it's not too large; if using Eskimos slice into about 3-4 pieces for each one).

5. Turn the entire mixture onto a long piece of plastic wrap. Shape into a long log.
If you're using coconut to cover it, you'd put the coconut onto the plastic wrap then shape it into a log with the plastic wrap.

6. Refrigerate for 4 hours. 

7. Slice into even slices.
